Old Fashioned Banana Cake & Piña Colada

Banana Cake
1/2 cup oil
1 1/2 cup sugar
2 eggs
2 ripe bananas
1/4 cup milk + 1 tsp vinegar
1 3/4 cup flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Preheat oven to 375 degrees
Combine oil, sugar, and eggs in mixer and blend until smooth
Add bananas and mix until there are no lumps
Mix milk and vinegar together and add to mix
Mix the remaining dry ingredients together and add to mix
Once combined, pour into cakepans and bake for 15-25 min
or until brown and toothpick comes clean
Top with brown butter icing and banana slices
Brown Butter Icing
1 stick butter
3 cups powdered sugar
1/4 cup milk
3 T real maple syrup

Boil butter in saucepan until completely melted and golden
Whisk in the powdered sugar and milk until smooth
Add maple syrup and whisk together
Piña colada
1 cup pineapple juice
1/4 cup cream of coconut
1/4 cup canned coconut milk
1/4 cup rum

Blend until smooth and creamy
